Promised to put my bread pudding recipe on the blog for a lady I met recently at the Surrey Childminder's Conference. So here it is! Very easy to make with the kids and use up some of that stale bread and store cupboard ingredients. Also a great snack or lunchbox addition.
Oven temp 180degrees conventional or 170 fan.
Grease a 2lb loaf tin or baking tin approx 9" x 9" (14 x 14cm).
8oz going stale white bread (can use mix with wholemeal too).
1/2 pint milk to soak bread (any type)
6oz mixed dried fruits (i.e. currants, raisins and sultanas)
(substitute 2oz fruit with finely chopped candied peel if liked)
2oz vegetable shredded suet
2oz demerera sugar
1 1/2 level tsps mixed spice
1 beaten egg (free range)
Milk to mix
Cut crusts from bread and break into small pieces into a mixing bowl. Pour over the half pint milk and leave to soak for half an hour. Beat out the lumps before adding all the ingredients ending with beaten egg and a little milk to mix together to a dropping consistency. Pour into dish, grate nutmeg over the top and bake in the oven for approx 1 1/2 hours. Leave to cool and dredge with golden caster sugar before cutting into squares. Delicious!
